Adventures in the kitchen with an energy bite recipe
I love energy. I think we can all agree that having more is a good thing. I’ve always searched for the one magical pill that would give me unlimited supply of it. Unfortunately, there isn’t a one magical pill for that. So I started searching the internet for something I could keep in the fridge that would do the trick when needed.
The name energy balls are not my jam, mostly because I don’t want to put balls in my mouth, but I settled for the name energy bites. These perfect little snacks I could throw in my pack for a hike, or take to the gym, or hit the road with. Something that would provide long term sustainable energy in my endeavors.
Peanut butter is a great protein source and may have other health benefits according to healthline.com. Flaxseed may help reduce your risk of heart disease, cancer, stroke, and diabetes according to webmd. You know? I’m up for any food that has more upsides than downsides so bring on those energy bites!

Adventure Energy Bites
1 c old fashioned oats
2/3 c toasted coconut flakes
1/2 c peanut butter
1/2 c ground flaxseed
1/2 c chocolate chips
1/3 c honey
1 tsp vanilla extract
Mix all of the ingredients together in a medium bowl until well mixed. Let chill in the fridge for half an hour. Once chilled roll into balls. I have a little ice cream cookie scoop that is just the right size. Store in airtight container in the fridge for 1 week.
Makes about 20 bites (depending on the size of your balls)
